Since Walnut Grove has little business activity, Roberts wanted to open a sandwich shop to serve the community.

“We don't have many options to choose from when it comes to food here in our small town. So I feel everyone will benefit from The Lunch Box,” she says.

Walnut Grove is Robert’s home. She was born and raised here, and she built a family here. She explains, “My mom raised me in restaurants, that's what I've always known. She has successfully owned many [businesses] throughout my life.”

Truly, Roberts wanted to open a sandwich shop because it’s been a dream of hers for a while. “I love bread. I've been wanting to open a sandwich shop for a while and now that my girls are older, and the perfect spot became available, it just seemed right,” she says.

Creating The Lunchbox was a difficult process for her. She started with nothing in the building, now she is just waiting for the final inspection to go through. “...Even the floors, walls had to be fixed, no sinks, not even gas, so we had no heat. …Getting permits and [valid] inspections are a whole other story. I am grateful to City Hall and their staff for patiently helping... Our goal is to open in March as long as the final inspection goes smoothly,” Roberts says.

Her mother is her biggest supporter and inspiration during the building process of The Lunchbox. Roberts expresses, “This being my first time opening a place, I honestly had a hard time getting started. I'm thankful I had my mom to advise me.”

There will be breakfast options, as well as lunch sandwiches. “We have quite a few options for breakfast: biscuits, burritos, hash brown bowls, grits, gravy, even fruit. We are also looking into the Acai bowls too,” she concludes.

Keep an eye out for the newest restaurant in the Walnut Grove area in the coming weeks.
